One neat thing you can do with the editor is enable 'Blue Knuckles' (Knuckles with Sonic's palette) for a save file if you have 'Advanced options' checked.

You can edit the character, the current zone (or select 'Clear' to set the game to beaten and make all zones selectable), the number of emeralds collected, lives and continues, and which special stage rings have been collected. Pick a save slot and uncheck the 'New' box to unlock editing. To use it, pick a game (Sonic 3 or S3&K) and make sure 'Write data' is checked (by default, S3&K is enabled and Sonic 3 is disabled).
